What is the best cookbook for someone who is learning how to bake?
I am looking for a thorough, informative, accurate, step-by-step book that will help me learn how to bake breads and cakes. One that might help me figure out what I do wrong scientifically.
For a book that’s a lot of fun and also informative, try “The Clueless Baker” by Evelyn Raab (2001). Not much in the way of photos, but it’s user-friendly in the text, and a great intro to baking.
For a more scientific approach, try “Cookwise” by Shirley O. Corriher (1997, William Morrow and Co.) She REALLY knows her stuff!
“The Better Homes and Gardens Complete Step-by-Step Cook Book” (1978) and “The Good Housekeeping Illustrated Cookbook” (1988) are among my personal favorites because the photos/illustrations are outstanding in the baking sections of these books.
Once you get past the basics, nothing beats “The Joy of Cooking.” The new edition is great, but I prefer the 1962 edition for the instructions for pastry and pound cakes.
