question for people who have the hungry girl cookbook?
i can’t buy the hungry girl cookbook, but i was thinking of trying some of the recipes that ive seen in it. could the people who have the book please give me these recipes:
pumkin crunchers
chilly chocolate cheesecake nuggets
caramel pumpking pudding cupcakes
vanillalicious cafe freeze
are those the hungry girl recipes? just making sure 
PUMPKIN CRUNCH
1 lg. can pumpkin
1 lg. can evaporated milk
1 c. sugar
1/2 tsp. cinnamon
3 eggs, beaten
Mix well and pour into a 9 x 12 inch pan lined with wax paper. Spread 1 box yellow cake mix on top. Press 1 cup chopped nuts over this. Melt 2 or 3 sticks butter and cool. Pour over nuts. Bake at 350 degrees for 1 hour. Cool well and add topping.
TOPPING:
8 oz. cream cheese
Mix with 1 cup Cool Whip. Spread on top of pumpkin crunch. Add chopped nuts, if desired.
MINI CHOCOLATE CHEESECAKES
1 pkg. Devils food cake mix
1 1/2 c. water
3 eggs
1 (8 oz.) pkg. cream cheese
1/2 c. sugar
1 egg, beaten
1 (6 oz.) pkg. chocolate chips
Empty cake mix into large bowl. Add water and 3 eggs; blend until moistened. Beat 2 minutes at medium speed. Fill cupcake liners in muffin tins 2/3 full.
In small bowl blend cream cheese, sugar, and beaten egg until mixture is smooth. Stir in chocolate chips. Put 1 teaspoon of cream cheese mixture on top of each cupcake.
Bake 15-20 minutes at 350 degrees.
Caramel Pudding Pumpkin Cupcakes
Ingredients:
2 cups moist-style yellow cake mix (1/2 of an 18.25-ounce box)
1 cup canned pumpkin puree
1/3 cup fat-free liquid egg substitute or energ egg substitute
2 tablespoons sugar-free maple syrup (or not)
2 teaspoons cinnamon
2 teaspoons sugar, in the raw or stevia, equivalent
1/8 teaspoon salt
Ingredients for topping
3 cubes chewy caramels (about 1 ounce)
2 teaspoons light vanilla soymilk
Directions:
1.Preheat oven to 350 degrees.
2.Combine all cupcake ingredients in a mixing bowl with 1/3 cup of water. Whip with a whisk or fork for 2 minutes until well blended.
3.Spray a 12-cup muffin pan with nonstick spray or line with baking cups. Evenly spoon batter into muffin cups.
4.Place pan in the oven and cook for about 12 minutes (until cupcakes have puffed up but still appear a little gooey on top).
5.Once cupcakes are cool enough to handle, arrange them closely on a plate so that the edges are touching. Place caramel and soymilk in a tall microwave-safe glass or dish (mixture will bubble and rise when heated).
6.Microwave at medium power for 1 1/2 minutes. Stir mixture vigorously until smooth and thoroughly blended. (Return to microwave for 30 seconds at medium heat if caramel has not fully melted.) Immediately drizzle caramel sauce over cupcakes.
Hungry Girl’s Vanilla Cafe Freeze
(98 calories, 1g fat)
Ingredients:
5 oz. light vanilla soy milk
3 tsp. Fat Free French Vanilla Coffee-mate powder (dissolved in an oz of warm water)
1 flat tsp. instant coffee
1 oz. Torani Sugar Free Vanilla Syrup
3 Splenda packets
5-7 large ice cubes
Fat Free Reddi-Wip
Place all of the ingredients in blender, except for the whipped cream. Blend on high speed for 30-45 seconds. Pour, and top with Fat Free Reddi-Wip. A vanilla dream!
